Chef Rado sources ingredients from a network of local farmers, foragers, and fishermen, many within a 50-kilometer radius of the restaurant. South Estonian flavors — smoked meats, root vegetables, forest berries, and wild game — are deconstructed and reimagined through modern culinary science, yet always retain their essential character.
The contemporary dining room in Tartu's city center provides an understated backdrop that lets the food take center stage. Each course arrives as a conversation piece, inviting diners to explore flavors and textures they've never experienced before.
